Windows 11 23h2/24 which apps are "safe" to replace?

Hi, if a list is already there it would be nice to mention it.
Paint XP still runs on 11.
Notepad even the note32 from chigaco
charactermap and some simple apps schould run
Now i have a question:
Are windows xp x64 apps stable? Will they run on windows 11? Or should i look at windows 7 x64 or windows 8.1? Some apps are having funny decorations on 11 taht are certainly not needed.
