That depends on the theme you are using. The Y2K, WinClassic 2000, WinClassic SysCol, and (soon to be released) WinClassic Dark themes all use Tahoma, while WinClassic 95 and WinClassic 98 use Microsoft Sans Serif. As you may be able to guess, these fonts are accurate to the operating systems the themes are representing.

When i was using ChromeOS for a bit it always used Google Sans everywhere.

It's probably also dependent on if the OS you use has the fonts available. When i was using ChromeOS for a bit it always used Google Sans everywhere. This is also true. We do not use web fonts, so it is up to your OS to provide the fonts. If the default font is not available, a fallback will be used instead. One instance where we ended up finding an alternative to simply using a font is with the close ( X ) button on dialog boxes, such as the one seen on the "Participated" dialog. Since Marlett is a major pain to work with on the web (let alone get to render correctly) and since its availability is pretty much limited to Windows, I just converted its glyphs to SVG and used that instead.
